Ingredients
  

  • 1.5 lbs baby potatoes halved or quartered
  • 6 cloves garlic peeled and left whole
  • 1 block feta cheese 7 oz use a full block, not crumbled
  • 3 tbsp olive oil extra virgin preferred
  • 1 tsp dried oregano or Italian seasoning blend
  • 1/2 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground
  • 1 tbsp fresh parsley chopped for garnish (optional)
  • 1 tbsp lemon juice for optional brightness at the end

Equipment

  • 1 Baking tray Large enough to hold potatoes & feta
  • 1 Mixing bowl For tossing potatoes
  • 1 Parchment paper Optional, for easier cleanup
  • 1 Oven Preheated to 400°F (200°C)

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper if desired.
  2. Toss the potatoes with olive oil, garlic cloves, oregano, salt, and black pepper in a mixing bowl until well coated.
  3. Spread the potatoes evenly on the baking tray. Nestle the block of feta in the center.
  4. Bake in the preheated oven for 30–35 minutes, or until the potatoes are golden and fork-tender, and the feta is softened and slightly golden at the edges.
  5. Optional: Drizzle with lemon juice and sprinkle with chopped parsley before serving.
  6. Serve hot as a side dish or a light vegetarian main.

Notes

  • For extra crispy potatoes, don’t overcrowd the pan and use convection mode if available.
  • Add red onions, cherry tomatoes, or olives to amp up the Mediterranean flavors.
  • Great with a side of tzatziki or on a bed of greens!
