Ingredients
  

  • For the Salmon:
  • 4 salmon fillets 5-6 oz each
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • For the Vegetables:
  • 1 lb baby potatoes halved
  • 1 cup green beans trimmed
  • 1 red bell pepper sliced
  • 1 small red onion sliced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional Garnish:
  • Fresh parsley chopped
  • Lemon wedges

Instructions
 

  • Preheat the Oven: Heat the oven to 400°F (200°C). Put parchment paper or foil on a large sheet pan for easy cleanup.
  • Prepare the Potatoes: Combine baby potatoes, one tablespoon olive oil, ½ teaspoon Italian seasoning, salt and pepper in a bowl; toss to coat. Scatter them over the sheet pan and roast for 15 minutes.
  • Season the Vegetables: As the potatoes are roasting, toss green beans, bell peppers, and red onion with the remaining olive oil, Italian seasoning, salt, and pepper.
  • Prepare the Salmon: Rub the salmon fillets dry with a paper towel. Brush with olive oil; season with garlic powder, smoked paprika, thyme, salt, and pepper.
  • Assemble the Sheet Pan: Take the potatoes out of the oven. Place the seasoned vegetables around the salmon fillets on the same sheet pan.
  • Bake: Put the sheet pan back in the oven to cook for 12 – 15 minutes, or until the salmon is flakey, and cooked through (145°F at the internal temperature).
  • Garnish and Serve: Sprinkle with fresh parsley and serve with lemon wedges for added zest.

Notes

For extra crispiness, broil for the last 2-3 minutes.
You can substitute vegetables with zucchini, asparagus, or carrots based on availability.
This recipe works with both fresh and frozen salmon (thaw before cooking).
