- Preheat the Oven: Heat the oven to 400°F (200°C). Put parchment paper or foil on a large sheet pan for easy cleanup.
- Prepare the Potatoes: Combine baby potatoes, one tablespoon olive oil, ½ teaspoon Italian seasoning, salt and pepper in a bowl; toss to coat. Scatter them over the sheet pan and roast for 15 minutes.
- Season the Vegetables: As the potatoes are roasting, toss green beans, bell peppers, and red onion with the remaining olive oil, Italian seasoning, salt, and pepper.
- Prepare the Salmon: Rub the salmon fillets dry with a paper towel. Brush with olive oil; season with garlic powder, smoked paprika, thyme, salt, and pepper.
- Assemble the Sheet Pan: Take the potatoes out of the oven. Place the seasoned vegetables around the salmon fillets on the same sheet pan.
- Bake: Put the sheet pan back in the oven to cook for 12 – 15 minutes, or until the salmon is flakey, and cooked through (145°F at the internal temperature).
- Garnish and Serve: Sprinkle with fresh parsley and serve with lemon wedges for added zest.
Notes
For extra crispiness, broil for the last 2-3 minutes.
You can substitute vegetables with zucchini, asparagus, or carrots based on availability.
