- For the Meat Sauce
- 1 tablespoon olive oil
- 1 pound ground beef
- 1/2 pound ground Italian sausage
- 1 small onion finely diced
- 3 cloves garlic minced
- 1 28-ounce can crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Cheese Mixture
- 1 15-ounce container ricotta cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley or 1 teaspoon dried parsley
- Other Ingredients
- 12 San Giorgio lasagna noodles cooked al dente
- 3 cups shredded mozzarella cheese
Prepare the Meat Sauce: In a large skillet over medium heat, heat olive oil. Stir in the ground beef, Italian sausage, onion and garlic. Cook until browned meat; the onion is tender. Add crushed tomatoes, tomato paste, oregano, basil, salt and pepper; stir. Simmer sloppily for 20 minutes (or so), stirring now and again.
Make the Cheese Mixture: In a medium bowl, combine ricotta cheese, egg, Parmesan cheese, and parsley until smooth. Set aside.
Prepare San Giorgio Lasagna Noodles: Fill a large pot with salted water and bring to a boil. Whatever pasta you use, follow the instructions for cooking: drain cooked pasta. Lay each sheet flat so they don't stick.
Assemble the Lasagna: Preheat oven to 375°F (190°C). Smooth a thin layer of meat sauce over the bottom of a 9x13-inch baking dish. Add a layer of San Giorgio lasagna noodles on top, then a layer of the cheese mixture, a layer of meat sauce, and a sprinkle of mozzarella. Repeat layers until all ingredients are used, finishing with mozzarella on top.
Bake the Lasagna: Seal the dish tightly with aluminum foil and bake for 40 minutes. Remove the foil, and bake an additional 10 to 15 minutes, until the cheese on top is golden brown and bubbly.
Let It Rest: Let the lasagna rest for 10 to 15 minutes before slicing so you can have clean, firm layers.
Add spinach or sautéed mushrooms for a veggie twist.

Substitute Italian sausage with ground turkey or chicken for a lighter option.
Use low-fat ricotta and mozzarella to reduce calories.
