Ingredients
  

  • 4 pieces sand dabs cleaned and patted dry
  • ½ cup all-purpose flour for dredging
  • 1 tsp salt or to taste
  • ½ tsp freshly ground black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 whole lemon cut into wedges
  • 1 tbsp parsley chopped (optional)

Equipment

  • Nonstick skillet
  • Fish spatula
  • Mixing bowl
  • Tongs
  • Paper towels

Method
 

  1. Rinse and pat dry the sand dabs with paper towels.
  2. Mix flour, salt, and pepper in a shallow dish. Dredge the sand dabs in the flour mixture and shake off the excess.
  3. Heat olive oil and butter in a nonstick skillet over medium heat. Pan-fry sand dabs for 2–3 minutes on each side until golden brown.
  4. Remove from pan and place on paper towels. Serve hot with lemon wedges and optional parsley.

Notes

Serve with a side salad, mashed potatoes, or steamed vegetables for a cozy seafood dinner vibe!
