Method
- Rinse and pat dry the sand dabs with paper towels.
- Mix flour, salt, and pepper in a shallow dish. Dredge the sand dabs in the flour mixture and shake off the excess.
- Heat olive oil and butter in a nonstick skillet over medium heat. Pan-fry sand dabs for 2–3 minutes on each side until golden brown.
- Remove from pan and place on paper towels. Serve hot with lemon wedges and optional parsley.
