- 6 large eggs
- 1 lb sausage meat
- 1/2 cup breadcrumbs
- 1/4 cup flour
- 1 egg for dipping
- 1 tablespoon Dijon mustard optional
- Salt and pepper to taste
- Oil for frying
Soft-boil 6 eggs for 6-7 minutes. When you are done, place them into cold water and peel them.
Season the sausage meat with salt, pepper and Dijon mustard, if using. Remove the sausage meat in 6 portions.
Flatten each section of the mixture into a patty and encase it around each egg, making sure it's completely covered.
Here's how: Roll the wrapped eggs in flour, then dip them in a beaten egg and coat them with breadcrumbs.
Heat oil in a deep fryer or pan to 350°F (175°C). Fry the Scotch eggs for 5-7 minutes until golden and crispy, turning occasionally.
Remove the eggs from the oil and drain on paper towels. Serve hot or cold with your favourite dipping sauce!
For a healthier version, bake the Scotch eggs at 375°F (190°C) for 20-25 minutes instead of frying.

You can add herbs or spices to the sausage meat like sage or thyme for added flavor.
For a firmer consistency, use hard-boiled eggs instead of soft-boiled ones. Just boil for 9-10 minutes.
