Equipment

  • Medium saucepan (for boiling eggs)
  • Deep fryer or large pan (for frying)
  • Slotted spoon (for removing eggs from boiling water)
  • Plate lined with paper towels (for draining)
  • Shallow bowl or plate (for flour and breadcrumbs)
  • Small bowl (for egg wash)
  • Tongs (optional, for handling the eggs while frying)

Ingredients
  

  • 6 large eggs
  • 1 lb sausage meat
  • 1/2 cup breadcrumbs
  • 1/4 cup flour
  • 1 egg for dipping
  • 1 tablespoon Dijon mustard optional
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • Soft-boil 6 eggs for 6-7 minutes. When you are done, place them into cold water and peel them.
  • Season the sausage meat with salt, pepper and Dijon mustard, if using. Remove the sausage meat in 6 portions.
  • Flatten each section of the mixture into a patty and encase it around each egg, making sure it's completely covered.
  • Here's how: Roll the wrapped eggs in flour, then dip them in a beaten egg and coat them with breadcrumbs.
  • Heat oil in a deep fryer or pan to 350°F (175°C). Fry the Scotch eggs for 5-7 minutes until golden and crispy, turning occasionally.
  • Remove the eggs from the oil and drain on paper towels. Serve hot or cold with your favourite dipping sauce!

Notes

For a healthier version, bake the Scotch eggs at 375°F (190°C) for 20-25 minutes instead of frying.

You can add herbs or spices to the sausage meat like sage or thyme for added flavor.
For a firmer consistency, use hard-boiled eggs instead of soft-boiled ones. Just boil for 9-10 minutes.
