Ingredients
  

  • For the Skillet Shrimp Fajitas:
  • 1 lb shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 tbsp lime juice
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • For the Cilantro Rice:
  • 1 cup white rice or brown rice for a healthier option
  • 2 cups water or chicken broth
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp fresh lime juice
  • 1/4 cup fresh cilantro chopped
  • Salt to taste

Method
 

Prepare the Shrimp Marinade:
  1. In a mixing bowl, combine the lime juice, chili powder, cumin, paprika, garlic, salt, and pepper.
  2. Add the shrimp and toss to coat evenly. Let the shrimp marinate for at least 15 minutes.
Cook the Cilantro Rice:
  1. In a medium pot, heat olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant.
  2. Add the rice and stir to coat with the oil and garlic. Pour in the water or chicken broth and bring it to a boil.
  3. Reduce the heat, cover, and simmer for about 15-18 minutes (or according to the package instructions) until the rice is tender and the liquid is absorbed.
  4. Fluff the rice with a fork and stir in the lime juice and chopped cilantro. Set aside.
Cook the Shrimp and Vegetables:
  1. In a large skillet, heat olive oil over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.
  2. In the same skillet, add the sliced bell peppers and onions. Cook for about 5-6 minutes until they begin to soften and slightly caramelize. Add the shrimp back to the skillet and toss with the vegetables.
Serve:
  1. Serve the sizzling shrimp fajitas over the cilantro rice, and garnish with extra lime wedges and fresh cilantro if desired.

Notes

  • If you prefer a spicier dish, add a diced jalapeño to the vegetables while sautéing.
  • This recipe can easily be made with chicken or beef instead of shrimp.
  • For a lower-carb option, substitute the rice with cauliflower rice.
