Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup brown sugar
  • 1/3 cup coconut oil melted
  • 1/2 cup almond milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 3 ripe bananas mashed
  • 1/2 cup chopped pecans optional

Method
 

  1. Ready the Oven: Set it to 325°F (163°C) and lightly oil a loaf pan.
  2. Dry Mix: In a big bowl, combine flour, baking soda, and salt.
  3. Wet Mix: In another bowl, whisk together sugar and coconut oil, then add almond milk, apple cider vinegar, and vanilla extract. Toss in mashed bananas.
  4. Mix: Carefully fold the dry mix into the wet one. Don't over-mix! Add pecans.
  5. Bake it: Pour your mixture into the loaf pan and bake it for about an hour.
  6. Chill: Let the banana bread rest in the pan for 10 minutes before moving it to a wire rack to cool down fully.
