- Preheat the oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking dish with parchment paper or cooking spray.
- Mix dry ingredients: In a medium mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Stir until well mixed.
- Add wet ingredients: In a separate bowl, melt the butter and stir in the honey (or maple syrup) and vanilla extract. Mix well.
- Combine: Pour the wet mixture into the dry ingredients and stir until combined. Add dried fruit and nuts (if using) and mix again.
- Bake: Press the oat mixture into the prepared baking dish, spreading it evenly. Bake for 25-30 minutes, or until golden brown and firm to the touch.
- Cool and Slice: Remove the bars from the oven and let them cool completely before slicing into squares.
