Ingredients
  

  • 4 medium Yukon Gold potatoes peeled and cubed
  • 1 cup sour cream
  • 1/2 cup fresh chives finely chopped
  • 1/4 cup shredded cheddar cheese optional
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Boil the potatoes: Add the cubed Yukon Gold potatoes to a large pot and fill with salted water. Add in the potatoes and broth or water, season lightly with salt, and bring to a boil. Cook everything for 10-12 minutes or until the potatoes are fork-tender.
  • Mash the potatoes: Drain the potatoes and return to the pot. Mash until smooth and creamy.
  • Add ingredients: Stir in sour cream, chives, salt and pepper to taste. If desired, mix in shredded cheddar cheese for extra flavor.
  • Transfer: Add the mashed potato mixture into a well-greased baking dish with olive oil. Level the top with an offset spatula.
  • Bake: Grease your dish or baking tray baking — and stick the dish in the preheated oven. Set it to 20-25 minutes or until the top looks golden brown and crispy.
  • To serve: Remove from the oven and let cool for a few minutes. If desired, garnish with more chives just before serving.

Notes

For a lighter version, you can substitute sour cream with Greek yogurt, or use low-fat sour cream.
