The Starbucks Potato Chive Bake is a savory and comforting dish made with mashed potatoes, fresh chives, and a creamy blend of sour cream and cheese. This homemade version captures the same deliciousness of the Starbucks version, with a crispy top and soft, flavorful interior. Perfect for breakfast, brunch, or as a side dish.
Boil the potatoes: Add the cubed Yukon Gold potatoes to a large pot and fill with salted water. Add in the potatoes and broth or water, season lightly with salt, and bring to a boil. Cook everything for 10-12 minutes or until the potatoes are fork-tender.
Mash the potatoes: Drain the potatoes and return to the pot. Mash until smooth and creamy.
Add ingredients: Stir in sour cream, chives, salt and pepper to taste. If desired, mix in shredded cheddar cheese for extra flavor.
Transfer: Add the mashed potato mixture into a well-greased baking dish with olive oil. Level the top with an offset spatula.
Bake: Grease your dish or baking tray baking — and stick the dish in the preheated oven. Set it to 20-25 minutes or until the top looks golden brown and crispy.
To serve: Remove from the oven and let cool for a few minutes. If desired, garnish with more chives just before serving.
