Step 1: Prepare the Date Mixture
- Place chopped dates into the Thermomix bowl.
- Add boiling water and let it sit for 5 minutes to soften.
- Add baking soda, then blend for 10 seconds on Speed 5 until smooth. Transfer to a bowl and set aside.
Step 2: Prepare the Batter
- Add butter and brown sugar to the Thermomix bowl. Cream for 20 seconds on Speed 4 until light and fluffy.
- Add eggs and vanilla extract, then mix for 10 seconds on Speed 3.
- Gradually add the self-raising flour, cinnamon, and salt. Mix for 15 seconds on Speed 4.
- Pour in the blended date mixture and mix for 10 seconds on Speed 4 until well combined.
Step 3: Bake the Pudding
- Preheat the oven to 180°C (350°F).
- Grease a cake pan and pour the batter evenly.
- Bake for 30–35 minutes or until a skewer inserted comes out clean.
Step 4: Make the Toffee Sauce
- Add brown sugar, butter, and heavy cream to the Thermomix bowl. Cook for 5 minutes at 90°C on Speed 2.
- Add vanilla extract and mix for 5 seconds on Speed 3.
Step 5: Serve & Enjoy
- Let the pudding cool for 5 minutes, then slice.
- Drizzle the warm toffee sauce generously over each portion.
- Serve with vanilla ice cream or whipped cream for extra indulgence!
