Ingredients
  

  • For the Sticky Date Pudding
  • 200 g dates pitted and chopped
  • 250 ml boiling water
  • 1 tsp baking soda
  • 100 g unsalted butter softened
  • 100 g brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g self-raising flour
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • For the Toffee Sauce
  • 150 g brown sugar
  • 200 ml heavy cream
  • 50 g unsalted butter
  • 1 tsp vanilla extract

Method
 

Step 1: Prepare the Date Mixture
  1. Place chopped dates into the Thermomix bowl.
  2. Add boiling water and let it sit for 5 minutes to soften.
  3. Add baking soda, then blend for 10 seconds on Speed 5 until smooth. Transfer to a bowl and set aside.
Step 2: Prepare the Batter
  1. Add butter and brown sugar to the Thermomix bowl. Cream for 20 seconds on Speed 4 until light and fluffy.
  2. Add eggs and vanilla extract, then mix for 10 seconds on Speed 3.
  3. Gradually add the self-raising flour, cinnamon, and salt. Mix for 15 seconds on Speed 4.
  4. Pour in the blended date mixture and mix for 10 seconds on Speed 4 until well combined.
Step 3: Bake the Pudding
  1. Preheat the oven to 180°C (350°F).
  2. Grease a cake pan and pour the batter evenly.
  3. Bake for 30–35 minutes or until a skewer inserted comes out clean.
Step 4: Make the Toffee Sauce
  1. Add brown sugar, butter, and heavy cream to the Thermomix bowl. Cook for 5 minutes at 90°C on Speed 2.
  2. Add vanilla extract and mix for 5 seconds on Speed 3.
Step 5: Serve & Enjoy
  1. Let the pudding cool for 5 minutes, then slice.
  2. Drizzle the warm toffee sauce generously over each portion.
  3. Serve with vanilla ice cream or whipped cream for extra indulgence!
