- Brown the Meat: In a large pot, heat over medium heat. Add the ground meat and cook until browned, using a spoon to break it apart. Drain any excess fat.
- Sauté Aromatics: Stir in the onion and garlic and add them to the pot. Cook for 2–3 minutes until fragrant and softened.
- Beef Base In Seasoning: Add the taco seasoning, beans, corn, diced green chilies, and diced tomatoes. Mix well to combine.
- Add Broth and Simmer: Add the broth and bring to a boil. Lower the heat to low, simmer uncovered for 20–25 minutes to incorporate flavors.
- Serve and Garnish: Ladle the soup into bowls and top them with Fritos, to be garnished with your favorite garnishes — cheese, sour cream or cilantro.
Notes
For a spicier version, add 1 teaspoon of chili powder or a pinch of cayenne pepper.
