  • ¾ cup Olive oil Extra virgin preferred
  • ¼ cup White wine vinegar Or apple cider vinegar
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tbsp Honey or sugar Optional for sweetness
  • 2 tsp Dried Italian herbs Basil oregano, thyme combo
  • ½ tsp Garlic powder Or 1 clove fresh garlic
  • ½ tsp Onion powder
  • ½ tsp Crushed red pepper flakes Optional - adds heat
  • ½ tsp Salt Adjust to taste
  • ¼ tsp Black pepper Freshly ground
  • 1 tsp Dijon mustard Helps emulsify

Method
 

  1. Whisk Together: In a medium bowl, whisk together the vinegar, lemon juice, mustard, honey, and all the seasonings.
  2. Emulsify: Slowly drizzle in the olive oil while whisking vigorously, or blend everything together in a small blender for 20 seconds until smooth.
  3. Adjust Flavor: Taste and tweak salt, sweetness, or acidity to your preference.
  4. Chill: Pour into a jar and refrigerate for at least 30 minutes before serving. This allows the flavors to meld beautifully.
  5. Serve: Shake well before each use. Use on salads, pasta, grilled veggies, or as a chicken marinade.
