Equipment

  • Cutting board
  • Sharp knife
  • Grater (for the carrot)
  • Spatula or spreader (for the hummus)

Ingredients
  

  • 4 large whole wheat tortillas or your choice of wrap
  • 1 cup hummus store-bought or homemade
  • 1 medium cucumber sliced
  • 1 medium carrot grated or julienned
  • 1 bell pepper sliced (any color)
  • 1 cup spinach fresh or baby spinach
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese optional
  • Salt and pepper to taste
  • 1 tablespoon olive oil optional
  • Fresh herbs such as parsley or cilantro, optional

Instructions
 

  • Getting the Tortilla Ready: Put your whole wheat tortillas on a clean table.
  • Apply the Hummus: Smear around 1/4 cup of hummus on each tortilla, make sure to avoid the edges.
  • Put Vegetables on Next: The sliced cucumber, grated carrot, cut bell pepper, spinach, cherry tomatoes sliced in half, and red onion go on top of the hummus.
  • Add Extras: Crumble feta cheese, sprinkle salt and pepper, and put olive oil over the vegetables if you want more flavour.
  • Rolling Time: Begin on one side, roll that tortilla tight. Fold in the edges to keep the filling safe.
  • Cut and Enjoy: Slice your wrap into two triangles. Enjoy it right away, or save it in foil for later.
