Ingredients
  

  • Soup Base
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • Salt and black pepper to taste
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 2 cups marinara sauce
  • 8 lasagna noodles broken into pieces
  • Cheese Mix
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley chopped
  • Garnish
  • Extra shredded mozzarella and parsley for topping

Equipment

Method
 

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add diced onions and cook until soft, about 3 minutes. Stir in garlic and cook for another minute.
  2. Brown the beef: Add ground beef to the pot. Season with salt, pepper, Italian seasoning, and red pepper flakes. Cook until fully browned.
  3. Add tomato flavor: Stir in tomato paste and cook for 2 minutes until deepened in color. Add marinara sauce and beef broth, stirring well.
  4. Simmer and add pasta: Bring to a simmer. Add broken lasagna noodles and cook until al dente, about 12–15 minutes, stirring occasionally.
  5. Prepare the cheese mixture: While the soup simmers, mix ricotta, mozzarella, Parmesan, and parsley in a small bowl.
  6. Serve and enjoy: Ladle soup into bowls and top with a generous dollop of the cheese mixture. Sprinkle more mozzarella and parsley on top if desired.

Notes

  • You can swap ground beef with Italian sausage or make it vegetarian with lentils or plant-based crumbles.
  • Use oven-ready lasagna noodles if you want to save time.
