Ingredients
  

  • 2 cups cubed watermelon
  • 1 cup cubed feta cheese
  • 8 –10 fresh mint leaves torn
  • 1 tbsp balsamic glaze optional
  • 1 tsp extra virgin olive oil optional, for drizzling
  • A pinch of cracked black pepper optional

  • 8 - 12 bamboo skewers - soaked in water if grilling or serving later
  • Sharp knife - for cubing watermelon and feta
  • Cutting board

Method
 

  1. Prep your ingredients: Cube the watermelon and feta into even bite-sized pieces; about 1-inch chunks work best for skewers.
  2. Assemble the skewers: Thread watermelon, a folded mint leaf, and feta onto each skewer. Repeat once or twice depending on the size of your skewer and appetite.
  3. Add a little flair (optional): Once assembled, lay skewers flat on a platter and drizzle lightly with balsamic glaze and/or olive oil. Sprinkle with cracked pepper if you’d like a savory note.
  4. Serve immediately or chill for up to 1 hour before serving.
