This Watermelon Mojito is summer in a glass, cool mint, fresh lime, juicy watermelon, and a fizzy finish make it the ultimate poolside (or couch-side) refresher.

Ingredients
  

  • 2 cups Fresh watermelon cubes chilled
  • 1 Lime sliced into wedges
  • 12 Fresh mint leaves plus more for garnish
  • 2 tbsp Sugar or to taste
  • 1 cup Sparkling water or club soda chilled
  • 1/2 cup White rum optional skip for mocktail
  • Ice cubes as needed

Equipment

  • 1 muddler or wooden spoon
  • 1 cocktail shaker or mason jar (optional)
  • 4 serving glasses
  • 1 fine mesh strainer (optional)

Method
 

  1. In a large bowl or pitcher, muddle the watermelon, lime wedges, sugar, and mint leaves until the juices are released and the mixture becomes fragrant.
  2. (Optional) Strain the mixture through a fine mesh sieve if you prefer a smoother drink.
  3. Pour the mixture evenly into 4 glasses filled with ice.
  4. Top with sparkling water (or club soda) and stir gently.
  5. Add a splash of white rum if you're making it boozy.
  6. Garnish with extra mint and a small watermelon wedge on the rim. Serve immediately!
