  • 1 ripe avocado halved, pitted, and mashed
  • ½ cup cottage cheese low-fat or regular
  • 1 tablespoon lemon juice freshly squeezed
  • Salt and pepper to taste
  • Optional toppings: chopped chives cilantro, cherry tomatoes, or red pepper flakes

Method
 

  1. Step 1: Mash the Avocado : In a medium mixing bowl, combine avocado and mashed together until smooth. If you like, leave a couple of lumps for some texture.
  2. Step 2: Place Cottage Cheese : Mix in the cottage cheese, making sure it is well incorporated with crushed avocado. The cottage cheese is there to give some creaminess and add more protein.
  3. Step 3: Season : Squeeze the mixture with lemon juice to give it some brightness and keep avocados from browning. Season with salt and pepper, to taste.
