Ingredients
  

  • Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • Wet Ingredients
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp rum extract or ½ tsp vanilla + ½ tsp almond extract
  • ½ cup milk or coconut milk for a tropical twist
  • ½ cup Greek yogurt or sour cream for extra moisture
  • For the Glaze Optional
  • ½ cup powdered sugar
  • 1-2 tbsp milk
  • ¼ tsp rum extract or vanilla extract

Instructions
 

1️⃣ Preheat & Prepare

  • Preheat the oven to 350°F (175°C).
  • Line a muffin tin with cupcake liners or grease with butter.

2️⃣ Mix the Dry Ingredients

  • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

3️⃣ Cream Butter & Sugar

  • In another bowl, use a mixer to beat the butter and brown sugar until light and fluffy.
  • Add eggs one at a time, beating well after each.
  • Mix in rum extract (or vanilla + almond extract combo).

4️⃣ Combine Wet & Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture, alternating with milk and Greek yogurt.
  • Stir gently until just combined (don’t overmix!).

5️⃣ Bake the Muffins

  • Divide the batter evenly into the muffin tin.
  • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  • Let them cool in the pan for 5 minutes, then transfer to a cooling rack.

6️⃣ Make the Glaze (Optional)

  • In a small bowl, whisk powdered sugar, milk, and rum extract until smooth.
  • Drizzle over cooled muffins for extra flavor!

Notes

For extra moisture, replace half of the butter with applesauce.
For crunch, toss in walnuts or pecans.
