Ingredients
  

  • Chicken
  • 4 bone-in skin-on chicken thighs or breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Mashed Potatoes
  • 2 lbs potatoes Yukon Gold or Russet, peeled and cubed
  • ½ cup whole milk or more to taste
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Gravy
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • Salt and pepper to taste

Equipment

  • 1 Large skillet (or cast-iron pan)
  • 1 medium pot (for boiling potatoes)
  • 1 whisk (for gravy)
  • 1 Potato masher

Method
 

Prepare the Chicken
  1. Season chicken on both sides with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium heat. Sear chicken skin-side down for 5–6 minutes until golden. Flip and cook another 5–7 minutes until internal temp reaches 165°F. Remove and rest.
Make the Mashed Potatoes
  1. Boil potatoes in salted water until fork-tender, about 15 minutes.
  2. Drain and mash with butter and milk. Season with salt and pepper to taste.
Prepare the Gravy
  1. In the same pan used for chicken (or clean skillet), melt butter. Add flour and whisk continuously for 1 minute.
  2. Slowly pour in chicken broth, whisking until smooth. Simmer for 5–7 minutes until thickened. Season to taste.
Plate & Serve
  1. Serve a generous scoop of mashed potatoes topped with gravy and a piece of golden chicken. Garnish with chopped parsley if desired.

  • Swap in boneless chicken for quicker cooking.
  • You can use store-bought broth or homemade stock for the gravy.
