Ingredients
  

  • 1 large egg
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp almond flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp monk fruit or erythritol sweetener
  • Cooking spray or butter for greasing waffle maker

Equipment

  • 1 Mini waffle maker (Dash or similar)
  • 1 Mixing bowl
  • 1 Whisk
  • 1 Measuring spoons set

Method
 

  1. Preheat your mini waffle maker and lightly grease with cooking spray or butter.
  2. In a bowl, whisk together the egg, almond flour, baking powder, cinnamon, vanilla, and sweetener until smooth.
  3. Fold in the shredded mozzarella cheese until evenly combined.
  4. Pour half the batter into the waffle maker, close the lid, and cook for 3–4 minutes until golden brown.
  5. Carefully remove the first chaffle, then repeat with the remaining batter.
  6. Serve hot with a sprinkle of cinnamon, sugar-free syrup, or whipped cream.

Notes

  • To make your cinnamon chaffles fluffier, separate the egg and whip the egg white before folding into the batter.
  • Add a pinch of nutmeg for extra warmth.
  • For a dessert-style version, drizzle with cream cheese glaze or serve with fresh berries.
