Equipment

Method
 

  1. Preheat and Prepare: Preheat your oven to 425°F (220°C) and lightly grease a muffin tin or baking tray.
  2. Shape the Bowls: Slice each potato in half and scoop out the centers with a spoon, leaving about ½ inch thick edges. Keep the centers to make Mashed Potato Cups.
  3. Season for Perfection: In a mixing bowl, toss the potato halves with olive oil, salt, pepper, garlic powder, paprika, and cornstarch. Coat evenly for a golden crisp finish.
  4. Bake Until Crispy: Place the potatoes upside down on the tray and bake for 25–30 minutes, flipping halfway through until golden brown and crunchy.
  5. Cool and Fill: Let the potatoes cool for about 5 minutes before adding your favorite fillings; scrambled eggs, cheese, or creamy guacamole.
  6. Garnish and Serve: Sprinkle herbs and serve immediately while hot. Each bite gives you that satisfying mix of crunch and fluff!
