- In a large mixing bowl, combine the drained salmon (remove bones if desired), egg, breadcrumbs, onion, mayonnaise, and seasonings.
- Mix until well combined and shape into small patties (about 6–8 depending on size).
- Heat oil in a skillet over medium heat.
- Fry the patties 3–4 minutes per side until golden brown and crisp.
- Transfer to a paper towel-lined plate. Serve hot with your favorite dipping sauce or a side salad.

Notes
You can substitute breadcrumbs with crushed saltines or panko for extra crunch. These salmon patties also taste great cold the next day in a sandwich!
