- In a medium mixing bowl, combine the cornmeal, flour, garlic powder, onion powder, paprika, pepper, and salt.

- Stir in the dried herbs (thyme and oregano) and cayenne if you’re using it.
- Whisk everything together until it looks evenly blended.
- Store in an airtight jar in a cool pantry it keeps for up to 3 months.

- To use: Dredge your fish fillets in the seasoning mix and fry them up in your favorite oil until crispy and golden.
Notes
