Unwrap the Sandwiches: Line up the ice cream sandwiches side by side (4 on top, 4 on bottom) on a sheet of plastic wrap placed over a baking sheet.
Spread the Filling: Carefully spread the whipped topping over the bottom sandwiches. Add mini chocolate chips or crushed cookies if using.
Top and Roll: Place the top sandwiches on and gently press to secure. Use the plastic wrap to roll and shape into a log. Seal the edges.
