Equipment

  • Mixing bowl
  • Colander (for draining spinach)
  • Spoon for mixing
  • Plastic wrap (for covering the dip while it rests)

Ingredients

  • 1 package 10 oz frozen chopped spinach, thawed and drained
  • 1 package 1 oz Knorr Vegetable Soup Mix
  • 1 cup sour cream
  • 1 cup mayonnaise

Instructions

  • Prepare the Spinach: Thaw the frozen spinach in the microwave or by leaving it at room temperature. Once thawed, drain all excess liquid by pressing the spinach in a colander or using paper towels to squeeze out the moisture.
  • Combine the Ingredients: In a large mixing bowl, add the thawed and drained spinach, Knorr Vegetable Soup Mix, sour cream, and mayonnaise. Stir everything together until well combined and the mixture is smooth.
  • Refrigerate: Cover the mixing bowl with plastic wrap or a lid and refrigerate the dip for at least 2 hours. The flavors will meld together and improve after resting.
  • Serve: After the resting period, stir the dip again and serve it with crackers, vegetable sticks (carrots, celery, cucumber), or sliced bread for dipping.

Notes

  • Light Version: You can swap out sour cream for Greek yogurt or use reduced-fat mayonnaise for a lighter version of this dip.
  • Extra Flavor: Add a tablespoon of garlic powder, onion powder, or freshly chopped green onions to give the dip an extra flavor boost.
  • Make-Ahead Tip: The dip can be made a day ahead of time for more convenience, and the resting time in the fridge allows the flavors to deepen and become even more delicious.
