Ingredients
  

  • Base:
  • 1 ½ cups cooked chickpeas about 400 g
  • 1 ¼ cups cooked lentils about 300 g
  • 2 cups cauliflower florets 250 g
  • 1 medium apple chopped (180 g)
  • 2 cups fresh leafy greens spinach, kale, or chard (150 g)
  • Flavor & Liquids:
  • 3 tbsp olive oil or 2 tbsp tahini
  • ¼ cup fresh lemon juice 60 ml
  • 3 cups low-sodium vegetable broth 600 ml
  • 2 tbsp fresh herbs lemon balm, mint, parsley
  • Pinch of sea salt to taste
  • Black pepper optional, to taste

Equipment

  • Large saucepan or Dutch oven
  • Steamer basket or small pot for vegetables
  • Chef’s knife and cutting board
  • Wooden spoon
  • Blender or immersion blender (optional)

Method
 

  1. Prepare Base Ingredients: Rinse chickpeas and lentils if canned. Chop apple, cauliflower florets, and greens.
  2. Cook Vegetables: In a saucepan, heat 1 tbsp olive oil. Add cauliflower and cook for 3–4 minutes. Add broth and simmer until tender (about 10 minutes).
  3. Add Legumes: Stir in chickpeas and lentils. Simmer another 5–7 minutes so flavors combine.
  4. Add Freshness: Stir in apple pieces and leafy greens. Cook for 2–3 minutes until greens wilt slightly.
  5. Finish with Flavor: Remove from heat. Add lemon juice, herbs, and remaining olive oil or tahini. Adjust salt and pepper.
  6. Blend Option: For creaminess, blend half the mixture (or use an immersion blender) and return to the pot. For chunkier texture, serve as is.
  7. Rest & Serve: Let sit for 5 minutes, then serve warm in bowls. Garnish with extra herbs if desired.
