- For the Cheese: First, you want to grate the sharp cheddar. For the best texture and flavor, grate cheese as you go.
- Combine the Ingredients: In a large mixing bowl, mix the grated cheese, mayonnaise, and chopped pimentos. Stir until well combined.
- Season: Stir in the Dijon mustard (if using), garlic powder, onion powder, cayenne pepper, salt and pepper. Make sure the spices are evenly distributed and well incorporated.
- Adjust Consistency: If the pimento cheese is too thick, add a bit more mayonnaise, one tablespoon at a time, until you reach the consistency you prefer.
- Chill: You can refrigerate the pimento cheese for 1 hour (or more) before serving for the best flavor.
- Serve: As a spread on crackers, in sandwiches, or as a dip with some veggies.
Notes
You can use low-fat mayonnaise or Greek yogurt to make this recipe a bit lighter.
Feel free to add a bit of hot sauce or jalapeños if you prefer a spicier kick.
