Ingredients

  • 12 oz pasta penne, spaghetti, or rigatoni
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup tomato sauce or crushed tomatoes
  • 1 cup heavy cream
  • 2 tbsp butter
  • ½ cup grated Parmesan cheese
  • ½ tsp red pepper flakes optional
  • Salt to taste
  • Black pepper to taste
  • Fresh basil chopped (for garnish)
  • ½ cup reserved pasta water as needed

Equipment

  • Large pot
  • Skillet or saucepan
  • Wooden spoon
  • Fine grater (for Parmesan)
  • Strainer

Method

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente, reserving some pasta water before draining.
  2. Heat olive oil in a skillet and gently sauté the minced garlic until fragrant and lightly golden.
  3. Stir in the tomato sauce and let it simmer for a few minutes to deepen the flavor.
  4. Pour in the heavy cream and stir continuously on low heat until the sauce turns smooth and blush-pink.
  5. Add butter and Parmesan, letting them melt into the sauce to create a creamy, glossy finish.
  6. Season with salt, pepper, and red pepper flakes, adjusting flavors to your preference.
  7. Add the cooked pasta directly into the sauce and toss thoroughly, adding reserved pasta water as needed for perfect coating.
  8. Serve warm and garnish with fresh basil for color and freshness.

Notes

For a lighter version, you can use half-and-half instead of heavy cream. Add cooked chicken, shrimp, or sautéed mushrooms to turn this into a complete meal. Whole-wheat or protein pasta works beautifully for extra nutrition.
