Ingredients
  

  • 4 cups rhubarb chopped (fresh or frozen, no need to thaw)

  • 1 package yellow cake mix 15.25 oz
  • 1 cup water or use apple juice for a fruity touch
  • ½ cup unsalted butter melted

Method
 

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.

  3. Add cake mix. Pour the dry cake mix evenly over the rhubarb and sugar layer — do not stir.
  4. Add liquid and butter. Pour the water (evenly distributed) over the top, then drizzle the melted butter across the entire surface.
  5. Bake for 45 to 50 minutes. The top should be golden brown and crispy around the edges.
