- Step 1 (Cook the Meat): Cook ground beef or sausage if using in a skillet over medium heat, breaking it up with spatula until browned and cooked through. No need to use cornstarch, etc in here because you are going to make your chili and drain off any extra fat.
- Step 2 (Melt the Cheese): In a medium saucepan over low heat, Combine Velveeta in small cubes. Stir from time to time so that it does not burn.
- Step 3 (Add Rotel): Once the cheese is starting to melt, add an un-drained can of Rotel tomatoes and green chilies. Stir well to combine.
- Step 4 (Combine Ingredients): Combine the cooked ground beef or sausage with the cheese and Rotel. Mix together till well combined For a creamier mixture, you could add 1/4 cup milk.
- Step 5 (Serve): Serve with chips, or keep warm in a slow cooker. If desired, spoon into a serving bowl with tortilla chips and serve.

- Chopped jalapeƱos for extra heat
- Diced onions or bell peppers for more texture
- Sour cream for creaminess
