- Prepare the Potatoes: Boil chopped potatoes in salted water until fork-tender (about 15 minutes). Drain and transfer to a large bowl.
- Mash & Flavor: Add butter, warm milk, salt, garlic powder, and optional sour cream. Mash until smooth and fluffy. Cover and keep warm.
- Cook the Salmon: Pat the salmon dry with paper towels. Season with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat.
- Sear the Salmon: Place salmon fillets skin-side down (if using) and sear for 4–5 minutes, then flip and cook another 3–4 minutes until the fish flakes easily with a fork. Squeeze fresh lemon juice over the top.
- Serve: Scoop a generous portion of mashed potatoes onto each plate, top with a salmon fillet, and garnish with parsley and lemon zest. Enjoy!
Notes
- You can substitute Greek yogurt for sour cream in the mashed potatoes.
- For an herby twist, add chopped dill or chives to the potatoes or salmon.
- Don’t overcook the salmon, it’s best slightly pink in the center.
