Ingredients
  

  • For the Salmon:
  • 4 fillets Salmon skin on or off, your choice
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • ½ tsp Black pepper
  • ½ tsp Paprika
  • 1 Lemon for zest and juice
  • For the Mashed Potatoes:
  • 4 large Russet potatoes peeled and chopped
  • ¼ cup Butter
  • ½ cup Milk warm, or heavy cream for extra richness
  • 1 tsp Salt
  • ½ tsp Garlic powder optional
  • 2 tbsp Sour cream or cream cheese optional, for extra creaminess
  • Fresh parsley chopped for garnish

  • Potato masher or ricer

Method
 

  1. Prepare the Potatoes: Boil chopped potatoes in salted water until fork-tender (about 15 minutes). Drain and transfer to a large bowl.
  2. Mash & Flavor: Add butter, warm milk, salt, garlic powder, and optional sour cream. Mash until smooth and fluffy. Cover and keep warm.
  3. Cook the Salmon: Pat the salmon dry with paper towels. Season with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat.
  4. Sear the Salmon: Place salmon fillets skin-side down (if using) and sear for 4–5 minutes, then flip and cook another 3–4 minutes until the fish flakes easily with a fork. Squeeze fresh lemon juice over the top.
  5. Serve: Scoop a generous portion of mashed potatoes onto each plate, top with a salmon fillet, and garnish with parsley and lemon zest. Enjoy!

Notes

  • You can substitute Greek yogurt for sour cream in the mashed potatoes.
  • For an herby twist, add chopped dill or chives to the potatoes or salmon.
  • Don’t overcook the salmon, it’s best slightly pink in the center.
