  • 2 large Cucumbers Persian cucumbers preferred finely diced
  • 3 medium Tomatoes Firm and ripe finely diced
  • 1/2 medium Red onion Finely chopped
  • 2 tbsp Olive oil Extra virgin
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tbsp Fresh mint Finely chopped
  • 1 tbsp Fresh parsley Optional
  • 1/2 tsp Salt To taste
  • 1/4 tsp Black pepper Optional
  • 1/4 tsp Sumac Optional for authentic Persian flavor

Method
 

  1. Finely dice cucumbers, tomatoes, and red onion into small, even cubes.
  2. Add all the chopped vegetables into a large mixing bowl.
  3. Drizzle olive oil and lemon juice over the vegetables.
  4. Add salt, pepper, and sumac if using, then toss gently to combine.
  5. Mix in chopped mint and parsley for fresh aroma and flavor.
  6. Chill for 10 minutes before serving to allow the flavors to blend perfectly.
  7. Serve cold and enjoy as a side with grilled meats, rice, or kebabs.
