Ingredients
  

  • For the Brownie Base:
  • 200 g 7 oz dark chocolate, chopped
  • 100 g 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 tsp salt
  • For the Tahini Swirl:
  • 1/3 cup tahini sesame paste
  • 2 tbsp powdered sugar
  • 1-2 tbsp milk or water optional, to thin

Method
 

  1. Preheat and Prepare: Preheat the Oven to 175°C (350°F). Prep an 8x8-inch baking pan with parchment paper, leaving an overhang for easy release.
  2. Melt the Chocolate: Melt the dark chocolate and butter together in a double boiler or microwave until smooth. Allow it to cool slightly.
  3. Mix the Batter: The only difference you will make for the filling is to whisk the granulated sugar, brown sugar, eggs, and vanilla extract in a mixing bowl until light and fluffy. Gradually add the melted chocolate mixture and whisk until blended.
  4. Combine Dry Ingredients: In another bowl, sift the flour and salt together. Fold the dry ingredients into the chocolate mixture in batches until just combined.
  5. Prepare the Tahini Swirl: In a small bowl, whisk the tahini and powdered sugar until smooth. If necessary, add 1-2 tbsp of milk or water to achieve a drizzle-like consistency.
  6. Assemble the Brownies: Spoon brownie batter into a prepared pan and spread it to an even layer. Drizzle the tahini mixture on top and, using a skewer or knife, make beautiful swirls.
  7. Bake: Bake in the preheated Oven for 25-30 minutes or until a toothpick inserted in the centre comes out with a few moist crumbs. You want to avoid baking them the entire way through, so they stay fudgy.
  8. Cool and Serve: Allow the brownies to cool completely in the pan, then cut into squares. Serve and enjoy!
