Ingredients
  

  • 1 lb ground beef or turkey/chicken for lighter version
  • 1 medium onion diced
  • 2 cups frozen mixed vegetables peas, carrots, corn, green beans
  • 1 can 10.5 oz cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt adjust to taste
  • 2 cups shredded cheddar cheese optional but recommended
  • 1 bag 32 oz frozen tater tots

Equipment

  • 1 large skillet (for browning meat)
  • 1 Mixing spoon
  • 1 9x13-inch casserole dish
  • 1 Oven

Method
 

  1. Preheat Ove: Set to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Cook Meat & Onion: In a skillet, brown the ground beef with diced onion until fully cooked. Drain excess grease.
  3. Mix Filling: Stir in frozen vegetables, cream of mushroom soup, milk, garlic powder, salt, and pepper. Simmer for 5 minutes.
  4. Assemble Hotdish: Pour the filling mixture into the prepared baking dish. Spread evenly.
  5. Cheese Layer: Sprinkle shredded cheddar cheese over the filling (optional for extra richness).
  6. Top with Tater Tots: Arrange tater tots in a single, even layer across the top.
  7. Bake: Place in oven uncovered for 40–45 minutes, or until tots are golden and crispy and filling is bubbling.
  8. Cool & Serve: Let rest for 5 minutes before serving.

Notes

  • For a healthier option, swap the cream soup with homemade light sauce or Greek yogurt.
  • Add spice with chili powder, hot sauce, or taco seasoning for a Tex-Mex twist.
  • Leftovers reheat beautifully in the oven or can be frozen for up to 2 months.
