Ingredients
  

  • 4 cups cubed seedless watermelon chilled
  • 1 cup cucumber sliced into half-moons
  • ¼ cup fresh mint leaves roughly torn
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon fish sauce or soy sauce to taste
  • 1 teaspoon chili flakes or fresh Thai chili optional
  • ¼ cup roasted peanuts lightly crushed
  • ¼ cup fresh cilantro optional

Equipment

  • 1 Large mixing bowl (preferably chilled)
  • 1 Chef's knife
  • 1 Cutting board
  • 1 Citrus juicer (optional)

Method
 

  1. Toss the cubed watermelon and cucumber in a large mixing bowl.
  2. Add the mint and cilantro leaves (if using), and give it all a gentle stir.
  3. In a separate bowl, whisk together the lime juice, fish sauce (or soy sauce), and chili flakes.
  4. Drizzle the dressing over the watermelon mix and toss to coat evenly.
  5. Sprinkle crushed peanuts on top just before serving.
  6. Serve immediately; crisp, cold, and crazy delicious.
