Boil and Peel: Wash and boil arbi for about 8–10 minutes until tender but not mushy. Peel and let them cool slightly.
Slice and Season: Cut the arbi into halves or quarters. In a bowl, add olive oil, turmeric, chili, cumin, coriander, amchur, and salt. Mix well to coat evenly.
Preheat the Air Fryer: Set your air fryer to 180°C (356°F) and preheat for 3 minutes.
Air Fry the Arbi: Spread the seasoned arbi pieces in a single layer in the fryer basket. Air fry for 12–15 minutes, shaking halfway for even crispness.
Serve and Garnish: Sprinkle fresh coriander leaves on top. Serve hot with mint chutney, lemon wedges, or curd for a perfect healthy snack.
