  • 4 medium Jack Crevalle fillets skin removed and cleaned
  • 1 tbsp lemon juice
  • 1 tsp white vinegar for soaking
  • 3 tbsp olive oil divided
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp butter optional, for pan finish
  • Fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Method
 

  1. Prep the Fish: Rinse fillets and pat dry. If needed, soak in cold water with lemon juice and vinegar for 15 minutes to mellow the strong flavor. Rinse and dry again.
  2. Season the Fillets: In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Rub generously over both sides of the fish.
  3. Preheat the Skillet: Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat until shimmering.
  4. Cook the Fish: Add fillets and sear 3-4 minutes per side or until golden and flaky. Optional: add butter in the final 30 seconds for a rich glaze.
  5. Rest and Garnish: Remove from pan and let rest 5 minutes. Sprinkle with fresh parsley and serve with lemon wedges.
